Intense golden colour. Very fine bubbles, with a full, persistent crown. Complex bouquet that evokes nuts, toast and citrus notes. Light and well integrated, with hints of wood ageing from the first fermentation. Ideal with snacks, rice and “surf and turf” dishes.

Celler Vell is pleased to offer our customers this artisan cava with full colour, bouquet and flavour. It is composed of 1/3 Xarel.lo and 1/3 Chardonnay - both fermented separately in 300 litre second-fill French oak allier barrels. The subsequent battonage –which leaves the yeast in suspension– lends body and smoothness to the cava, which will remain in the barrel for between 6 and 8 months. Finally, the coupage , or blending process, is carried out, when the Pinot Noir variety is added. The cava is then bottled for ageing for around two years.
